Cranberry Relish

Cranberry Relish, Four Seasons Hotel Baltimore
SERVES 6

Ingredients:
1 lb fresh cranberries
1 cup orange juice
2 tbsp honey
½ cup sugar
1 orange, zested
1 tbsp balsamic vinegar

Method:
1. Put all ingredients In a pot over medium-low heat and simmer for 1 hour.

2. Strain out cranberries and reduce the remaining liquid by half.

3. Add cranberries back and cook for 10 more minutes.
