You’ve heard of the days of wine and roses? Well, now it’s time for the days of wine and lavender! Four Seasons Resort Scottsdale at Troon North is celebrating a Lavender and Wine Festival on August 16 to 18. The property has partnered with nearby Matanzas Creek Winery, home to fine merlot, syrah, sauvignon blanc and chardonnay wines as well as breathtaking fields of lavender.
At Talavera and Proof, sample dishes that expertly highlight lavender as an ingredient—a crisp green salad with lavender vinaigrette, rib-eye with lavender glaze or lavender salt and honey-crusted prime rib recipes, all paired with Matanzas Creek wines. “Lavender is a flavor that needs to used subtly, to avoid being overpowering,” says Executive Sous Chef Jesse Hansen. “Too much, and your food will taste like a bar of soap! Lavender goes well with sweet flavors, such as honey, agave nectar, dressings, marinades, even chocolate.”
Beverages also get the lavender treatment. “Lavender is a great complement to spirits; we actually feature the ‘Lavender Mule’ on our regular Proof menu,” says Hansen. “This drink, made with lavender syrup, also features ginger beer, a great spicy complement to lavender’s floral notes.”
